A Cattle Breed That's Been Doing This for 2,000 Years
British White cattle are one of the oldest polled breeds in existence — documented in Britain since the 17th century and prized for exactly what we want from them today: calm temperament, efficient grazing, and exceptional beef quality without pushing calories from a feedlot.
They marble well on grass alone. Their moderate frame means less waste and more yield per animal. And because they're naturally polled — no horns — they're easier on each other, easier on fencing, and genuinely calm to work with.
At Dry Valley Farm we selected British Whites because they fit our land, our management style, and the quality we want to put our name on. When you buy a share or a steak from us, that breed selection is part of what you're getting.

Dry Valley Farm started the way most farms do — with land, a clear-headed vision of what we wanted to build, and a willingness to do the hard work to get there. We're located outside Cookeville, Tennessee, raising British White cattle, cut flowers, and Bernese Mountain Dogs on the same ground our family works every day.
We chose British Whites deliberately. Not because they're trendy, but because after doing the research, they are genuinely the best fit for our land, our pasture conditions, and the quality of beef we want to sell. They're calm, they marble well on grass, and they don't require a feedlot to reach a quality finish.

Simple Recipes Worth Making
Good beef doesn't need much. These three recipes work for every skill level and cover the cuts you'll have most of in your freezer.
Cast Iron Ribeye with Herb Butter
The simplest way to cook a ribeye — high heat, short time, and herb butter does the rest.
- 1. Pull steak from fridge 30 min before cooking. Season generously with salt and pepper on both sides.
- 2. Heat cast iron skillet until smoking. Add a splash of oil, lay in the steak.
- 3. Sear 3–4 min per side for medium-rare. Add butter, garlic, and rosemary the last 2 min — baste constantly.
- 4. Rest 5 min before slicing. Spoon the pan butter over the top.
Sunday Chuck Roast
British White chuck roast is the most forgiving cut in your freezer. Low and slow makes it fall-apart tender.
- 1. Season roast with salt, pepper, and garlic powder. Sear hard in a Dutch oven until deeply browned on all sides.
- 2. Add sliced onions, carrots, potatoes, and 2 cups beef broth. Cover tightly.
- 3. Cook at 300°F for 4–5 hours until meat pulls apart easily with a fork.
- 4. Rest 15 min. Serve with the braising liquid spooned over the top.
Dry Valley Smash Burgers
Grass-fed ground beef has more flavor than you're used to — a hot griddle and a good smash is all it needs.
- 1. Form ground beef into loose 3 oz. balls — do not pack tight. Season with salt only.
- 2. Heat griddle or cast iron until very hot. Place ball on surface and smash flat immediately with a spatula.
- 3. Cook 2 min until edges are crusty and brown. Flip once, add cheese, cook 1 min more.
- 4. Stack on a toasted bun with your toppings. Serve immediately.
